Let’s get you in the kitchen for some salted car Let’s get you in the kitchen for some salted caramel truffles shall we? ⁠
A trick for all recipes, read all the steps carefully before you begin, this will help you prepare all your bits and pieces 👩🏼‍🍳😉⁠

Ingredients ⁠
⁠
•	500 grams dark chocolate finely chopped⁠
•	60 grams of sugar⁠
•	2 tbs water⁠
•	450ml whipping cream⁠
•	¼ tsp sea salt⁠
•	½ cup unsweetened cocoa powder⁠
⁠
Preparation⁠
⁠
1. Place 200g dark chocolate in a metal bowl over a pot of barely simmering water (do not allow bottom of bowl to touch water)⁠
⁠
2. Stir until chocolate is smooth and remove carefully⁠
⁠
3. Combine sugar and water in small medium saucepan. Stir over medium heat until sugar dissolves, occasionally brushing sides of pan with wet pastry brush, do not stir.⁠
⁠
4. Increase heat; boil until syrup is deep amber color, about 4 minutes. remove from the heat.⁠
⁠
5. Lower the heat and add cream, be careful mixture will bubble. Stir over very low heat until caramel is smooth. Mix caramel and 1/4 tsp salt into melted chocolate. ⁠
⁠
6. Chill until truffle filling is firm, at least 3 hours.⁠
⁠
7. Sift the cocoa powder and place into a large bowl. Using 1 tablespoon truffle filling for each truffle, roll into balls, then roll in cocoa powder. ⁠
⁠
8. Chill over night. ⁠
⁠
9. You may skip this next part if you prefer a soft truffle.⁠
⁠
10. Line a baking paper in a tray. You may dip the truffles in chocolate to make another layer of chocolate by repeating the process of melting the rest of the chocolate in two parts.
250g  bain marie like in the above instructions and when the chocolate has started to melt, and with the help of a candy thermometer, make sure the chocolate is not above 50 degrees C. Add the remaining 50grams of the chocolate and stir to melt all the small pieces. Chocolate should be about 32 degrees C. ⁠

11.	Working rapidly dip the truffles in the chocolate and with the help of a fork remove the truffles, tap the fork against the side of the bowl to remove the excess and place them on a baking paper. ⁠

12. Let the truffles set⁠
⁠
13. Ready to serve 😁⁠
